        BOWL FULL OF FUN
   "it's all about the taste and texture"

    this dish is my suggestion and your creation........

​​
ingredients
chicken or vegetable broth, (8 oz. per serving usually works)
fish, chicken, beef, shrimp, salmon, tofu, *egg or your favorite protein--pan seared, baked or broiled.


your favorite carbohydrate ,  rice noodles, rice, egg noodles (be sure to measure per portion)  

your favorite vegetables (snow peas, carrots, celery, mushrooms, cabbage, bean sprouts, scallions, jalapeno pepper) etc .

sesame oil 
or extra virgin olive oil or oil of your choice (infused oil, spicy oil) 
basil leaves (your favorite variety)
mint leaves

prepare your protein (broil, poach etc.) set aside and keep warm 
simmer your broth until hot but not boiling
add  1 green scallion chopped, 1 jalapeno pepper thinly sliced or amount per your taste, 1 tsp of sesame  or extra
virgin olive oil or oil of your choice and simmer for 3 minutes.


add  vegetables, as many as your single serving desires  
simmer all above for 5 minutes or until desired taste

*(if you decide to use an egg, poach it in the broth at this time)

serve

In a large serving bowl place your single serving of rice or noodles, vegetables, pour broth over your carb  just to peek through, but not cover everything, add your protein on top of everything, salt and pepper or soy desired,YOUR FAVORITE HOT SAUCE OR HOISIN  add a healthy portion of  basil and mint leaves and enjoy. 
MINDFUL TEA
WHILE STAYING HOME DURING COVID19
During this time of Pandemic Covid 19 Virus I find myself searching for my quiet time to create a healthy environment, to sit in a kind place, to meditate, and to focus on my entire body and keeping it well the best I can; being home bound to respect the rules passed on by our leaders, such a challenge while watching many suffer.  I love many teas.  I made myself familiar with Hibiscus Tea.  I wanted something to be kind to me during this time of panic so I chose cardiovascular.  My heart goes out to all who are frightened as I and to those that are working the front line of this horrific virus.  God Bless !   


​Hibiscus Tea is on the tart side, mildly fruity in flavor.  Hibiscus supports the cardiovascular system from what I have read, but don't take my word for it, dive right in and look it up!  Get involved and see where it takes you....

Hibiscus Tea can be purchased many places, just search your favorite sites.
Organic Hibiscus Tea is one of my go to healthy teas.  I especially like this tea cold and kept in a clear glass bottle in the refrigerator.  This tea is very refreshing over ice with a wedge of lime, orange or both!  If you are drinking it hot let it steep for 3-4 minutes and add a dash of honey or clove or cinnamon stick or all 3! to the bottom of your mug while steeping,  just remember to remove it before drinking! enjoy

                      Creation with Perfection

                     recipe makes 6 hearty bowls of soup 


ingredients--1 whole chicken cut up, fresh dill, parsley, thyme, 1 whole small lemon (scrubbed and seeds removed cut in half), salt, white pepper, carrots (sliced), parsnips( chopped), celery(chopped), shallot(chopped), 2 large cloves of garlic (smashed), grated hard Italian cheese, pasta or rice. 

in a medium stock pot place washed chicken, 1 tblsp. kosher salt and cover with water, no more than 1" above the chicken, simmer for 1 hour on medium high heat, do not let the water boil below half full, add more if this happens, but never more than what you started with.  after the first hour ADD celery, garlic, shallot, thyme sprigs, dill, parsley, lemon halves, squeezed and put in soup,  simmer medium-low for two hours only adding water if below the 1/2 way mark.  after two hours remove lemon pieces and chicken, break apart chicken removing all bones and add back into the pot, at this point you can add more water, but slightly, otherwise you will water down your stock simmer on low until ready to eat.

ready to serve
 
ADD salt and pepper to taste. Add your favorite pasta or rice and sprinkle with cheese.

NOTE:  do not try to fill a pot of water and add one small chicken.  if you want a big pot of soup be sure to double the chicken. 

it takes patience to make a good soup stock.  do not get stressed about it. ...  master the soup and all the intentions that went into making it.
